This dressing is usually used for bang bang chicken, a dish I used to serve often at dinner parties because it looks good, tastes good, and is an absolute sitter to make. The chicken is served on a bed of shredded lettuce, and the lettuce is even better than the chicken in some ways. Anyway, this makes a change from vinaigrette.

Here’s what you need

Sesame seed paste/tahini. You can cheat a bit and use smooth peanut butter (yuck) with the addition of some sesame oil.

Rice wine vinegar

Chilli oil. You can cheat and use chilli sauce, but watch the proportions or you’ll have a nose bleed.

Dark soy sauce

Light soy sauce

A cos lettuce

A hand blender; you really can’t get away without this

Here’s what you do

I’m not even going to try to get the quantities right, but I can give you the proportions. Be grown up and work it out.

In a deep basin, put a tablespoon of tahini, or peanut butter with a teaspoon of sesame oil. Whizz it up with your hand blender. It may best if you put the shaft of the blender through a hole in a shower cap, and fix the elastic over the rim of the basin. It really is a messy process.

When the paste is nice and creamy and beginning to fluff, add a tablespoon of wine vinegar, a tablespoon each of the light and dark soy, and a teaspoonful of chilli oil. Maybe some salt; that’s up to you. Pinch of sugar? You decide.

Put the shower cap on (on the basin, not your head, obviously) and whizz till it’s all mixed up and lovely. If it’s a bit thick add light and dark soy, and wine vinegar, in small equal quantities till it’s about the consistency of vinaigrette.

Shred the lettuce and put it into individual bowls. Rice bowls are about right, but don’t stint on the lettuce

Serve so that people can use the dressing to their taste. Warn them it may be hot.
